Vegan Challenge - Update #1

Ok, so after testing out some vegan recipes on the weekend, today was the day I challenged myself to go vegan all day! I almost did it! I slipped and ate a hard boiled egg at lunch and ate a muffin also made with egg.  Besides the "egg slip up", I did not consume any other animal products (that I know of). It actually wasn't so bad! I wasn't hungry at all, but this day did require some planning. Here is what I ate today:

Breakfast: Vegan Protein Shake (powder is made from hemp, pea, and rice) with spinach, berries, banana, almond milk + black coffee

Mid Morning snack: Chia/Hemp "overnight oatmeal" with almond milk, fresh berries, and quinoa "granola"

Lunch: Curried quinoa salad with chickpeas, raisins, and pine nuts (+ the egg ... boo), snap peas.

Afternoon Snack: "Green Monster" Smoothie + muffin (oops)

Dinner: Raw Rad Rainbow Pad Thai, one 70% chocolate square (dairy free).

Post-workout Snack: apple + snap pea crisps


Not a perfect day, but it will take some time to get used to! Did I mention this is all gluten free also! I think I did pretty good!! Proud of what I accomplished!

Next week, I will remember "No egg"!! LOL
