New Ventures




I realize that I promised to blog more this year and yet here we are mid-march and I haven't posted one since January! I have no idea where the time went!

Our life has been a whirlwind! We have been preparing to open our first "freshii" franchise.  About a year ago we bought the franchise and have been working on finding a location and construction of the restaurant. We finally made it! Our store opened on March 7th and has been doing well! Now we are focusing on keeping balance in our family as we develop new "norms" and routines.

Many people have asked, "why freshii"? My husband has always wanted to run his own fast food restaurant, but an opportunity never appeared. On a trip to Denver, we discovered a little joint that made grain bowls and was "Jen" friendly (meaning it had gluten free and dairy free options).  This sparked something in Derek. He also read an article about Matthew Corrin, founder of freshii, and began to follow the company's success. In the fall of 2014, Derek mentioned that he was interested in opening a freshii franchise and started doing some serious investigating.

We have always been self proclaimed "foodies". Even imagining what it would be like to be food critics when we go out to dinner. So in order to be "all in" with the franchise, we needed to test out the food ... and we loved it! Healthy, plentiful, delicious, and "Jen" friendly!

Derek quit his job last summer and became a "stay-at-home" dad while the restaurant was being developed. It was a great 6 months having him at home to get the kids on the bus and make dinner, etc. 6 months seems long, but it went by sooooo fast!

The next chapter in our lives has begun! We are so grateful for all the support in our adventure from family and friends!
